Fruit Fillings
Whole red cherries, crisp apple slices and firm, golden peaches are some of the luscious fruits we use to make first-rate fillings for delicious pies, pastries and other culinary treats that reflect a homemade, indulgent character.
While some of our fruit fillings are whole, others are diced, sliced or cubed. The process by which the filling is produced plays a large role in maintaining the wholesomeness of the finished product. We manufacture fruit fillings using two methods:
Kettle Cooked Filling: The filling is made in large kettles specifically designed to provide gentle agitation during cooking that minimizes any damage to fruit pieces.
Retort Filling: Lawrence Foods has built an enviable reputation for the high quality of our retort process, which protects fruit from damage caused by mechanical agitation. We are exclusive producers of retort fillings in plastic containers, which hold slightly more than a #10 can and are packed 4/.75 gallon pails to a case. This resealable and reusable container, with a tamper-evident film below the lid, seals in freshness and offers added convenience and versatility. Note that others have attempted to imitate this process by using a similar container filled with a kettle-produced product. Once you look closely at our filling, however, the difference is obvious.
Orchard Fresh Cobbler® Fillings: Excellence every time, even without an experienced baker. Making a cobbler was never easier or more convenient. No refrigeration is necessary, either before or after preparation. Our Orchard Fresh Cobbler® Fillings are sealed in high density plastic pouches with ultra protective barrier properties to extend their shelf life.
Compotes: Compotes are different from fillings because they are designed to flow naturally and be easily spooned or poured, making them perfect toppers for pancakes and waffles. Since our compotes are retort products, they have the fruit integrity of our fruit fillings with a viscosity close to a cobbler. They are ready-to-use, shelf stable, bake-stable and can be used either hot or cold. Use them as toppings for breakfast items and desserts. Or, mix them directly into batters.
EZ Squeeze® Fruit Fillings: Loaded with the freshest diced fruit and filled in handy 2 lb. angle-cut sleeves, packed 12 to a case. Simply cut off a corner of the sleeve and squeeze the filling out the tip. A thick or narrow bead is adjusted by the size of the corner cut.
Fil-N-Top®: The name Fil-N-Top® says it all. Fil-N-Tops® are designed with fruit pieces made for injector pumps used by many retail and supermarket bakeries. These injectors have a stem about a ½ inch in diameter that is inserted into a donut, which will plug if the fruit is too large to pass. Because Fil-N-Tops® are also oven-proof, they are frequently used as a topping and filling for coffeecakes, Danish and sweet rolls.
No Sugar Added: Our delicious and nutritious No Sugar Added Fruit Fillings are whole fruit fillings with no additional sugar added. They are made with sucralose, which comes from sugar and tastes just as sweet. And, you will not find any phenylalanine, commonly found in other popular artificial sweeteners. This product line is ideal for health conscious consumers and those on restricted diets or watching their sugar intake. Our No Sugar Added Fruit Fillings are ideal in cakes, pies and tarts. They can also be used as a topping over breakfast items, cheesecake and ice cream sundaes. You can even warm them up and serve them as a tasty side dish next to an entrée.
