Icing Types
Lawrence Foods manufactures all three types of icing in a ready-to-use form or in a base for flat icings.
Buttercrème: Our Buttercrème Icings are most commonly used to decorate and embellish cakes and cupcakes. These shelf-stable icings supply a delicious flavor, will remain smooth and will not crust. They’re also easy to apply because they have a super light viscosity and texture, which increases decorator productivity and minimizes ergonomic strain. We’ve got tons of bold and pastel colors, along with a huge selection of delectable flavors like Banana, Caramel, Cookies and Crème, Dark Chocolate, Lemon, Mango and Raspberry.
Fudge Base: Fudge bases are used as a first step in making a fudge-style icing with a rich taste and smooth mouth feel. Generally, sugar is added to achieve the final result. We have two bases available – a standard fudge base and a special ultra high quality Cocora. Our Cocora is designed as a replacement for chocolate liquor with a more concentrated flavor profile.
High Heat Vanilla String Icing: Our ready-to-use High Heat Vanilla String Icing is a squeezable bright white icing with a yummy vanilla flavor. This microwavable phenom will hold its shape during heating and delivers a stunning gloss to finished products. String it over breakfast breads, cakes (i.e. Bundt, pound cake), dessert pizzas and flaky pastries.
Pomolenes™: Pomolenes™, or icing fruits, are concentrated flavor/color and fruit particulate that can be added to batters, doughs, icings and spreads to achieve a specific appearance and fruit flavor. These formula components add bold flavor, robust aroma and vivid eye appeal to a range of baked products.
Ice-N-Set: Ice-N-Set is a heatable flat icing that offers a somewhat higher level of stability. This donut icing has a gel set in the pail and must be lightly stirred to assume a liquid form.
Reddi-Spred: Reddi-Spreds are all-purpose fudge icings, which may be used straight out of the pail for brownies and cakes or heated and used as a flat icing over donuts.
Ultra Dip-N-Dry: Ultra Dip-N-Dry icings do not need to be heated when applied to a donut, as the icing will begin to dry and form a skin, which is dry to the touch in a matter of minutes. These superstars will remain fresh-looking all day.
